Recipe: Omena
What is Omena? Omena is small fish most common among the Luo community in Kenya.. Good source of protein. Found in Lake Victoria. Omena should be properly cleaned or it will have a bitter taste will have sand when you eat it! Omena carries a lot of sad so it should be washed properly. To clean it up put in a pot/sufuria with lots of water and bring to boil for about 15 minutes. Let the water settle and let the dirt settle at the bottom and the scoop the Omena out. Repeat again. After cleaning it up, deep fry until brown to prevent it from breaking before cooking it with sauce…some people skip the deep frying part! When taking it out of deep fry place a paper towel to drain the oil.

Ingredients:
• Two cups of Omena
• Two large tomatoes/chopped
• One large onion/chopped
• Cooking oil
• Salt
• 2 Roiko cubes or 1 Maggi
• 2 spoons of Roiko
• Other spices that you like
• Water. Make sure milk is more than the milk you put
• Milk or coconut cream and Cream
• Freshly ground garlic
• Two cups of Omena
• Two large tomatoes/chopped
• One large onion/chopped
• Cooking oil
• Salt

• Other spices that you like

Instructions
1. Heat oil in a pan and add the chopped onions.
2. Once the onions are cooked add tomatoes
3. Then add the spices and salt and stir
4. Cook for about three to five minutes in low heat while stirring.
5. Add water and milk/cream/or coconut
6. Let it simmer
7. Add cubes and roiko…make sure these are thoroughly mixed
8. Add the deep fried Omena to the mixture and stir gently.
9. Let them simmer for about 10 minutes.
